Easiest Creamy Zucchini Soup
In the mood for something warm but pressed for time? Try making this easy soup that takes only 30 minutes! This soup is a great way to add extra “hidden” vegetables in your diet and skips the excess fat and sodium like pre-made soups at the store. Ingredients
3 zucchini
3 garlic cloves
1/2 yellow onion
32 fl oz low-sodium vegetable broth or chicken broth
3 tbs greek yogurt
salt and pepper
Method
Rough chop zucchini, onion, garlic
Add produce to a large pot with vegetable broth and bring to a boil
Once boiled bring to medium - low heat and let simmer for roughly 20 minutes
Transfer to a blender and add greek yogurt; blend
Once fully blended, serve hot; add salt and pepper to taste
Optional toppings: parmesan cheese, olive oil, crushed red pepper, croutons, fresh herbs
