Easiest Creamy Zucchini Soup

In the mood for something warm but pressed for time? Try making this easy soup that takes only 30 minutes! This soup is a great way to add extra “hidden” vegetables in your diet and skips the excess fat and sodium like pre-made soups at the store. Ingredients

  • 3 zucchini

  • 3 garlic cloves

  • 1/2 yellow onion

  • 32 fl oz low-sodium vegetable broth or chicken broth

  • 3 tbs greek yogurt

  • salt and pepper


Method

  • Rough chop zucchini, onion, garlic

  • Add produce to a large pot with vegetable broth and bring to a boil

  • Once boiled bring to medium - low heat and let simmer for roughly 20 minutes

  • Transfer to a blender and add greek yogurt; blend

  • Once fully blended, serve hot; add salt and pepper to taste

  • Optional toppings: parmesan cheese, olive oil, crushed red pepper, croutons, fresh herbs
